Sweet ’26 Sugarin season has begun as maple trees have been tapped this week with a few to go. A critical part of our silvopasture, homestead food supply, and cottage industry. Lots of washing and packing of materials and tools, drill and fit spile in tree. Then tap-tap-tapperoo away till it thunks and the spout is set. Place glass, put lid on, measure tub, fix it to spile and jug, and wait. Boil downs will probably start tomorrow. Soon delicious and nutritious nonfiltered small batch organic local sugar, maple syrup. Thank you, Dionysus, for this new year and new harvest season.
